Jude’s Date, Nut, Chocolate Chip Cake

This is Minoo’s second recipe which is Jude’s Date, Nut and Chocolate Chip Cake. This is a cake filled with lots of goodies like honey, date, walnut and chocolate chip. This is quite a dense cake and it’s preferably bake in a shallow pan to prevent overbrowning of the edges while the inside is not fully cooked.

I have no idea why this is called Jude’s Cake. I tried googling it but came up with nothing on it at all. Anyone of you out there know why this is called Jude’s Cake? For all I know, Jude might just be someone Minoo knows.

Ingredients

  • 1 cup chopped, pitted dates
  • 1 1/2 cups boiling water
  • 1 1/2 teaspoon baking soda
  • 1 1/2 sticks butter, softened
  • 2/3 cup honey
  • 2 eggs
  • 1 3/4 cups flour (whole wheat or half unbleached white)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup chopped walnuts
  • 8 to 10 oz semi-sweet chocolate chips

Instructions

IMG_5200_edited-1.jpgSoak the dates in 1 1/2 cups of boiling water and 1 1/2 teaspoon baking soda. Let it stand for half hour till cool.
IMG_5205_edited-1.jpgPreheat the oven to 350F. Grease and dust a 9×13 baking pan and set aside.Cream the butter and honey. Add in the eggs and beat well till light and fluffy.
IMG_5206_edited-1.jpgMix in the cooled dates liquid and blend well.
IMG_5218_edited-1.jpgMix in the dry ingredients (1 3/4 cups flour, 3/4 teaspoon baking soda and 1/2 teaspoon baking powder). The dry ingredients can be sifted if you like but not necessary. Mix until well blended but not overmix.
IMG_5222_edited-1.jpgStir in the chopped nuts, chopped dates and chocolate chips.
IMG_5225_edited-1.jpgPour into the butterred baking pan and bake in a 350F preheated oven for 45 to 55 minutes or until a cake tester comes out clean. Cool completely on a rack before slicing. This cake is best baked the day before to allow the ingredients to mellow out.

I love this cake as it’s not too sweet and it’s full of the goodness of honey, nuts and dates. Minoo, thank you for sharing the recipe with us.

    I tried your moist choco cakelast time and it came out good. Just one doubt .. for some recipies you mention 1 stick of butter how much gram does it mean.?? In India we do not get sticks of butter we get it in gram form.. can you help me out in this..
