Chocolate Chip Banana Bread

Out of the blue, I just wanted to bake a quick bread for breakfast. Looking through my recipe file for something which my kids will eat, I found this Chocolate Chip Banana Bread which sounds delicious. I just happen to have some ripe bananas in my fridge and it must be lucky day.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs (at room temperature)
  • 2 large VERY rip bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnut

Instructions

Preheat oven to 350F. Grease a 9 x 5 inch loaf pan or lined the load pan with parch paper.

IMG_0023_edited-2.jpgBeat butter, sugar, baking powder, baking soda and salt in a large bowl until light and fluffy.
IMG_0024_edited-2.jpgBeat in eggs one at a time until blended.
IMG_0026_edited-2.jpgBeat in bananas and vanilla extract.
IMG_0028_edited-2.jpgGradually beat in flour until blended.
IMG_0029_edited-2.jpgStir in chocolate chips and nuts.
IMG_0030_edited-2.jpgPour into prepared pan. Bake 60 to 65 minutes or until a pick inserted in the center comes out clean.Cool in pan on rack for 5 minutes before removing from pan to rack to cool completely.

The bread turned out great except it’s slightly too brown. I will lower the temperature a little the next time I make this again.

    Looks great! My favourite is the kind they sell at Starbucks, Bean Around the World, etc… seems that it’s the same style almost everywhere. Moist and just sweet enought (bad for my health I’m sure!)

    Oh! And tying for first is the one my friend Caroline makes. It’s soo good!

    Oh, chocolate and bananas are good any way combined! This looks so good. I have a really easy recipe for this too. You don’t even need a mixer with it! Hmmmm, have bananas….have chips…..tummy growling…. haha.
