Peanut Butter Cookies

This is a very simple Peanut Butter Cookies recipe and yet very rich in peanut butter flavour. It’s a flourless recipe.

This Peanut Butter Cookie is the ultimate cookie for peanut butter lovers.

Ingredients

  • 2 cups peanut butter
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract

Instructions

Preheat the oven to 325F.

IMG_6980_edited-1.jpgMix until the ingredients are well blended.
IMG_6981_edited-1.jpgI used an ice-cream scoop to form small balls on a parchment lined baking sheet. I find the ice-cream scoop to be a very handy utensil for making cookies. You’ll bet you get the same size cookies all the time.These cookies do not spread very much on the cookie sheet. This means that the shape they have when they go into the oven is pretty much the shape they will have when they have finished baking.
IMG_6983_edited-1.jpgI used a fork to press down the small ball of cookies. In order to prevent the cookies from sticking to the fork while pressing them down, I dipped the fork in some granulated sugar first.You may use the bottom of a glass to press the cookies down too.

IMG_6984_edited-1.jpgBake the cookies in a preheated 325F oven for about 18 to 20 minutes. The thinner the cookies, the quicker they will cook. Watch out as the the cookies burn easily.

I do find this cookies a bit too sweet. I will reduce the amount of sugar the next time I make it again.

Here is my revised recipe:

  • 1 cup peanut butter
  • 1 egg
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup rice krispies

I find the rice krispies gives the cookie an extra crunch.  I preferred this new version of peanut butter cookies.
