Vegetable Pancake

Minoo made a Vegetable Pancake in her cooking class at the Caring Place. If you have problems getting your kids to eat vegetables, like mine, the Vegetable Pancake is a good way to get them to eat it. This pancake is crispy which somehow camouflages the vegetables in it.

Vegetable Pancake

The tuna topping gives the Vegetable Pancake an extra edge. I think it’s a brilliant idea Minoo had of the tuna topping. I can imagine how rather ho-hum this would be without this extra topping.

Ingredients

  • 2 potatoes peeled
  • 1 onion peeled
  • 2 carrots peeled
  • 1 cup Biscuit or pancake flour
  • 2 eggs
  • 1/3 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dry or fresh herbs like rosemary, thymes, sage (optional)
  • oil for frying

Toppings

  • Mix a can of fish (salmon/tuna/sardines) with some mayonnaise and green onions (optional)
  • Crush a can of beans (chickpea/navy beans/kidney beans) and add 1 tablespoon of oil and 1-2 teaspoons of chopped garlic

Instructions

Minoo005_edited-1.jpgPrepare the topping by mixing a small can of flaked tuna (drained) with some mayonnaise.  Set aside for later use.
Minoo006_edited-1.jpgGrate the potatoes and carrots and finely chopped the onions. Place in a colander and squeeze out as much liquid as possible in a sink.
Minoo007_edited-1.jpgIn a bowl, beat the eggs and combine with milk.In case you run out of milk, you may reconstitute some milk powder with some water.
Minoo008_edited-1.jpgMix in the Bisquick.  Whisk until it’s not lumpy and the mixture is smooth.
Minoo009_edited-1.jpgSeason the shredded vegetables with salt, pepper and herbs.
Minoo011_edited-1.jpgAdd the egg mixtures into the shredded vegetables and mix well.
Minoo013_edited-1.jpgIn a pan, heat some oil on medium.  Spoon a tablespoon of the vegetable mixture into the pan and flatten with the back of the spoon.  Brown for about 2 minutes or until the batter dries on the top.  Turn the batter over and brown for another 1-2 minutes.  Remove from the pan with a slotted spoon and drain on a paper towel.

The Vegetable Pancake is best served hot with the topping. You may substitute other vegetables like zuchinni, green beans or green onions (thinly sliced). Minoo, thank you for a great recipe to get kids to eat vegetables.

  1. First time to your blog and I noticed the veggie pancakes came from “Minoo”? Minoo is a Persian name. Is she Persian? Does she have some Persian recipes to share?

    I love Persian food and am always looking for new Persian recipes :)

  4. What a great dish. It seems similar to Japanese okonomiyaki or Korean jun as well. You’re right. The tuna on top is a nice touch.
