		<description>It is called Impossible Pie because although it is one mixture, it makes three separate layers.  The crust, the filling, and the topping.  My mother used to make this one and it is delicious.

		<description>My step mother in law here in Edmeston, NY made this for Christmas dinner last year.  She says it's called Impossible Pie because it seems impossible that a pie could be made without a crust but yet a 'crust' is sort of formed at the bottom of the pie as a result of the coconut browning.  Hope that helps.
