Instant Curry Chicken Nyonya Mix

Ben brought back some instant curry mixes from Malaysia during his Singapore-Malaysia trip recently. One of them is this Instant Curry Chicken Nyonya Mix.

I made the Nyonya Curry Chicken and served it together with some nasi lemak condiments like sambal onions, cucumber, fried anchovies and peanuts.

Ingredients

  • 1 package of the Instant Curry Chicken Nyonya Mix
  • 1 can of coconut milk (400ml)
  • 6 chicken drumsticks (600g of cut up chicken pieces)
  • 2 tablespoons oil

_MG_9017.jpgHeat the oil in a frying pan. Add the Instant Curry Chicken Nyonya Mix and fry for a minute until fragrant.
_MG_9018.jpgAdd in the chicken pieces and coat them with the curry paste. Cook for 2 minutes.
_MG_9020.jpgLastly, add in the coconut milk and reduce the heat to simmer for 20 to 30 minutes or until the chicken is cooked.
_MG_9021.jpgThe gravy will thicken slightly when the chicken is cooked. The gravy is quite spicy and it goes really well with steam rice or even some bread for dipping. Try some of these curry mixes which is commonly available in most Chinese groceries stores and you may be amazed by the result even though the cooking is so simple.
