Orange Marmalade Chicken

Minoo kicked of the Caring Place Community Kitchen with two dishes. The first dish is Orange Marmalade Chicken. This chicken dish is very easy to make and you can substitute the orange marmalade with apricot or peach jam.

The sauce from this dish is just great to go along with steamed rice. I’m sure kids will love this dish.

Ingredients

  • 1 whole chicken, cut up or 10 pieces of skinless thigh
  • juice of 1 lemon
  • 1 cup orange marmalade
  • 1/2 cup light soy sauce or tamari

Instructions

Preheat the oven to 350F.

IMG_9313_edited-1.jpgWash the chicken and place in an oiled casserole dish or baking pan. Squeeze the lemon juice over the chicken.
IMG_9315_edited-1.jpgMix the orange marmalade with the soy sauce and spoon over the chicken.  Turn the chicken pieces to coat well.
IMG_9320_edited-1.jpgCover with aluminum foil and bake in the center rack of a 350F preheated oven for 45 minutes. Remove the cover and bake for 10 more minutes.  Switch to broiler setting and broil for 5 to 10 minutes on the top rack to get a golden brown crisp top.

This recipe is handy as it does not require marinating the chicken first.  I find that chicken thigh yields more tender meat.
