Cheesy Shrimp Dish

Minoo made this Cheesy Shrimp Dish to be eaten with rice. You may substitute the shrimp with other meat like cooked chicken or ham. This is kind of one pan dish. It’s complete with protein, fiber, vitamins and carbohydrate.

Ingredients

  • 2 cups of cooked rice
  • 3 tablespoons oil
  • 1 cup cooked shrimp or chicken or ham
  • 1 onion, chopped
  • 1 red sweet pepper, chopped
  • 2 cloves of garlic, minced
  • 2 large tomatoes, diced
  • 2 eggs
  • 1 cup grated cheddar cheese
  • 2 teaspoons tamari
  • salt and pepper to taste

Instructions

IMG_9478_edited-1.jpgUse a large skillet with a lid. Sauteed the onion with the oil until softened and add the garlic and stir-fry for another 30 seconds.
IMG_9481_edited-1.jpgAdd the peppers and shrimp and season with salt, pepper and tamari.
IMG_9483_edited-1.jpgBreak in the eggs and stir to scramble.
IMG_9485_edited-1.jpgTop with the grated cheese and remove from heat. Cover the skillet until the cheese melted. Add the tomatoes and serve on rice. This is a very simple dish which can be ready in less than 30 minutes if you have all the ingredients handy.

    Another way to deal with the prawns… Need to try it and I hope my husband will like it.
