Danish Brovst Dream Coffee Cake

For dessert, Charlene, Frank and Karen made this Danish Brovst Dream Coffee Cake. As it was Minoo’s birthday, this cake also serves as her birthday cake.

This cake has a topping of baked coconut flakes which resembles little ant and hence this cake is also known as “ant cake”. This cake is dense and sweet.

Ingredients

  • 250g (2 cups) all-purpose flour
  • 50g (about 3 tablespoons +1 teaspoon) butter or margarine
  • 300g (about 1.5 cups) sugar
  • 4 eggs
  • 200ml milk
  • 3 teaspoons (15ml) baking powder
  • 1 teaspoon vanilla

Filling:

  • 125g (1/2 cup or 8 tablespoons) butter or margarine
  • 100g grated coconut
  • 250g brown sugar (275ml packed or 1 1/8 cup packed)
  • 50ml milk

Instructions

Preheat the oven to 400 F (200 C) and place the rack in the middle of the oven.

danishcoffeecake-18Place a bowl over a saucepan of boiling water without touching the water.

Add eggs and sugar into the bowl and whisk till it is thick.

Remove bowl from saucepan.

Sift flour and baking powder together, and carefully fold into the eggs and sugar mixture.

(I did not get photos of the individual steps because the activities in the kitchen is overwhelming with all the stations going at the same time. I might miss a few steps at times).

danishcoffeecake-17Melt the butter and add milk either in a sauce pan on the stove.

Alternatively, you can microwave the butter on high for 1 minute in a glass dish and add milk to the melted butter.

Add the milk and butter mixture to the dough slowly and stir the mixture to combine.

danishcoffeecake-15Grease and flour a springform cake pan. You may line the pan with parchment paper instead.
danishcoffeecake-14Pour the batter into the springform pan. Bake in the 400F preheated oven on the middle rack for 20 minutes or until a toothpick pricks into the center of the cake comes out clean.
danishcoffeecake-13While the cake is baking, prepare the filing.

Mix the butter, coconut flakes, brown sugar and milk in a saucepan.

danishcoffeecake-12Heat through on low heat on the stove. If the mixture is too thick, you may add a bit more milk. Set aside till cake is baked.
danishcoffeecake-11Pour the fillings on top of the baked cake.

Turn the oven up to 225F or 450F. Place the cake back in the oven and bake for another 5 minutes.

What we did in the kitchen is to place the cake in an oven with a broiler for 5 minutes.

Cool and remove the cake from the springform cake pan. Serve with coffee or tea.

  1. Never seen this cake before. This looks great. I’m a great fan of the European style desserts. This one sounds delicious.
