The chinese dish you are wondering about is a Sichuan cold bean-jelly noodles (liang fen), but in your case the jelly is shaped in cubes instead. It relies heavily on the sauce. I really enjoy it, if it has extra garlic to it. Some restaurants make it with the Sichuan pepper which, I prefer they not because it makes the tongue paralyze.
