Love Miku. I was first introduced to them at last year's Taste BC (I think you were there too, Ben + Suzanne!) and went back several times for their sushi. I'm usually not a fan of 'hot' sushi but the taste was fantastic.

I love the umami of pine mushrooms. I remember having a spectacular soba dish in Tokyo made with pine mushrooms. I imagine that broth is similar to what I had after the soba was done when my waitress poured hot soba water into my remaining pine mushrooms and tsuyu.

I've always found that omakase is the best way to fully experience what a sushi chef (or any other masters of their profession) does. In Japan, I wouldn't bother with menus usually...just asking the chef for whatever it is he makes best.

When you are the best, people will come. The art of cooking makes it worth the money. Your menu makes me hungry!

hi ben, great review on miku! other restaurants also have aburi sushi, so i'm not sure about the name or the technique being copyrighted. you should definitely order the aburi salmon oshi sushi next time you're around. my favorite item on the menu!

Now that you mention it, FMED, I could have gotten it wrong. I think they said they copyrighted the name "Aburi" for this technique, not the technique itself. I don't know. LOL! *shrugs*

They "copyrighted" their aburi technique!? LOL. We'll see about that. Looks like a fine meal nonetheless.
