		<description>What we received was the collar which includes the cheek.  Halibut is much bigger and usually you just get the cheek but if you just got just salmon cheek you probably would feel ripped off.

		<description>looks so good! when i&#039;ve had shrimp tempura sushi, it&#039;s kind of heavy; having cucumber and avocado in it sounds like it would lighten and freshen it up. i also once had sushi with lemon in san fran; was so good.

about the cheek, is it sometimes called collar? i had collar before and the shape looked like that...</description>

and Luc is right, the salmon belly with the milt and the eggs have the most protein in it and is what the bears will normally go after.  But I was also told that the back of the neck also had high value.
