Ken, one of the seniors in the South Arm Cooking Club for seniors, shared this recipe in the kitchen.
- 1 1/3 cup all purpose flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1 cup buttermilk
- 1/2 cup water
- 1/4 cup vegetable oil
- 1 1/2 teaspoons vanilla extract
Prep time: 20 minutes; Bake time: 35 minutes; Serves 8 to 10
|Preheat the oven to 350F. Grease an 8-inch baking pan.
Sift flour, cocoa powder, baking soda, baking powder and salt into a large bowl.
|Add brown sugar and mix well.|
|Combine buttermilk, water, vegetable oil and vanilla in a medium bowl. Stir to combine.|
|Add the liquid ingredients into the dry ingredients and beat with a spoon until smooth and shiny, about 50 strokes.|
|Pour into a prepared pan and bake in a 350F preheated oven for 35 to 45 minutes or when a toothpick inserted into the center of the cake comes out dry. Let cool before serving.
