Blueberry Upside Down Cake

Jenny and Minoo teamed up to make two different types of cakes in the Caring Place Community Kitchen. Jenny is a new addition to this community kitchen.

We learned that Jenny is strong believer of organic food. She is very health conscious and try to avoid processed food as much as possible.

So, what is organic food? Organic food is food that is produced without the usage of pesticides, artificial fertilizers or sewage sludge or genetically modified. Organic food is food that is processed without adding food additives or ionizing radiation. As for the animals, organic means the animals were reared without the usage of antibiotics or growth hormones. In layman term, organic food is food that is grow naturally without human intervention.

Jenny shared with us a Blueberry Cake. She used frozen organic blueberries. During the blueberry season in summer, Jenny bought 100 pounds of organic blueberries and freeze them for her consumption for the rest of the year until the next season. Jenny told us she makes blueberries smoothies every morning for her breakfast.

Jenny baked her Blueberry Cake in a heart shape pan in view of the coming of Valentine’s Day. I had so many posts lining up that I had to post this after Valentine’s Day.

Blueberry Cake

The warm blueberries nestled in a light. lemony cake make this cake the perfect fianle for any meal. It is excellent for coffee time or snacking too.

Blueberry Cake

Ingredients

  • 2 tablespoons butter or margarine
  • 1/3 cup brown sugar
  • 1 1/2 cups blueberries
  • 1 teaspoon cornstarch

For the cake

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup soft butter or margarine
  • 2/3 cup granulated sugar
  • 1 egg
  • 2/3 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon rind
  • 1/2 teaspoon vanilla

Blueberry Muffin

Minoo’s second recipe is a healthy Blueberry Muffin made with whole wheat flour and honey. Minoo uses frozen blueberry because blueberry season is over. The frozen blueberry is as good as the fresh one.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 2 teaspoons baking powder
  • a pinch of salt
  • 1 cup milk or buttermilk
  • 2 eggs, beaten
  • 4 tablespoons salted butter, melted
  • 3 tablespoon maple syrup or honey
  • 1 teaspoon vanilla
  • 1 cup blueberries

I will not blog in details of the process of making the blueberry muffin as I had blogged about a Banana Blueberry Muffin earlier. The steps will be similar.

Instructions

Preheat the oven to 375F. Butter a 12-cup muffin tin or line it with paper cups. Sift the dry ingredients in a bowl. In another bowl, beat the eggs, milk, butter, vanilla and honey together. Add the wet ingredients to the dry ingredients. Fold in the blueberries. Spoon the batter into the prepared muffin tins and bake for 25 to 30 minutes or until golden.

Serve warm or at room temperature.

Minoo’s Blueberry Muffin is not very sweet and has all the goodness of whole wheat flour, blueberries and honey. A great recipe for kid’s breakfast or lunch box.

Banana Blueberry Muffin

This Banana-Blueberry Muffin is a recipe from Betty Crocker. Banana and blueberries blend well together with the sweetness from the banana and tartness from the blueberries.

I got this recipe from the web in my early days of learning how to cooking six years ago. Since then, it’s been a classic in my family every blueberry season.

Ingredients

  • 2/3 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup mashed very ripe banana (1 medium)
  • 1 egg
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1 cup fresh or frozen (thawed and well drained) blueberries.

U-Pick Blueberries

Polly invited us to the U-Pick Blueberries last weekend. We have never been to pick blueberries before and never knew where the U-Picks were; even though there are a lot of blueberry farms all over Richmond.

Polly found one on 11071 Blundell Rd. Coincidentally the owner of the farm were from Malaysia too. We found it spooky when another customer in the farm on that day were also from Malaysia. You can always spot a Malaysian accent with their unique version of English — I call it Manglish!

This farm does not sell blueberries at all because he apparently had a lot of orders. He told us that he had already orders for batches of 50lbs or 100lbs that he can hardly fulfill!

Blueberries are native to North America and Eastern Asia. They grow on shrubs as high as 8 ft tall. The blueberry season typically runs from May to October every year.

The fruit are pale-greenish at first, then turns redish-purple before ripening and turning blue or dark purple.

The blueberries in this farm are organic. The organic blueberries costs $1.75 per pound for u-pick. This is much cheaper than buying it from the stores which could cost up to $3 per pound or $5 for organic ones. The owner of the farm can pick to order for $2.25/lb.

This is an old farm where the shrubs were planted very close to one another. It was difficult getting through some part. We were wearing shorts and short sleeved Ts. We ended with quite a bit of scratches.

We only managed to pick less than 2 lbs after 1 hour. It was hard work but fun. During that time the four of us took to pick 2lbs, the owner were out also picking. He picked about 20lbs … alone!

Blueberry Buckle

Blueberry is in the season now. I bought some from the groceries store but it’s still expensive in this time as it costs $2.99 per pound.

Blueberries are powerful inflammation fighters and antioxidants. The antioxidants found in blueberries help to reduce the risk of cancer. Certain compounds found in blueberries (also found in cranberries) are found to have a significant impact in reducing degradation of the brain as in Alzheimer’s disease. Research also showed that blueberries prevent urinary tract infections.

I made this blueberry buckle for my family for all the goodness of blueberries.

The blueberry buckle has a very crunchy topping and the cake is slightly tangy from the blueberries. Arkensen loves it.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 2 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 cup shortening (I use margarine)
  • 3/4 cup milk
  • 1 egg
  • 2 cups blueberries

For the topping

  • 1/2 cup sugar
  • 1/3 cup flour or more
  • 1/2 teaspoon cinnamon powder
  • 1/4 cup soft butter
