Oatmeal, Raisin and Chocolate Chip Cookies

Minoo also made this scrumptious Oatmeal, Raisin and Chocolate Chip Cookies in the South Arm Community Kitchen. It is about time to switch on the oven to do some baking as the weather is getting colder. I love the aroma from baking sweet treats.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup butter or margarine
  • 2 cups brown sugar, packed
  • 2 large eggs
  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 2 cups chocolate chips
  • 1 cup raisins

Instructions

Preheat the oven to 350F. Grease the cooking sheets or line them with parchment paper.

Parchment paper is completely non-stick and can be used over and over again. It is economical in the long run because it saves washing, greasing and flouring cookie sheets and it prevents the frustrations of cookies sticking to the cookie sheets.

IMG_9621Measure the rolled oats, shredded coconut, chocolate chips and raisins into a bowl, mix well and set aside. Whisk the flour, baking powder and soda in another bowl.
IMG_9618In a separate bowl, beat the butter and sugar together until fluffy using a hand mixer, scrapping down the sides to ensure even beating.

Add the eggs, one at a time, beating well after each addition.

IMG_9622Add the flour mixture using a large wooden spoon and blend thoroughly.
IMG_9624Mix in the oats, coconut, chocolate chops and raisins mixture.

Blend well.

IMG_9626Drop rounded teaspoonfuls of the dough 2-inches apart on the cookie sheets.
IMG_9627Lightly flatten the dough with a fork. Bake approximately 10 minutes or until golden brown. Transfer to a rack to cool.

This recipe yields 48 cookies.

    i have been searching for a oatmeal cookie recipe for ages!!! question though if i left out the shredded coconut and the chocolate chips will it be a basic oatmeal cookie recipe?

    Hi Michie, you can surely leave out the shredded coconut and the chocolate chips but I would recommend you increase the rolled oats from 2 cups to at least 3 cups or more. Let me know how it turns out.
