For the main course, Minoo and Mona made Fettuccine with Roasted Pepper and Sun Dried Tomato Sauce in the South Arm Cooking Club for seniors. This is kind of a vegetarian pasta dish.
Although the sauce for this Fettuccine has no meat in it, it is still very flavourful and satisfying.
- 4 large red bell peppers
- 1 large onion, roughly chopped
- 2 cloves of garlic, minced
- 1/2 cup sun-dried tomatoes (dry or oil pack)
- 2 cups boiling water
- 1 lb fettuccine pasta
- 2 tablespoons butter
- 3/4 cip half & half
- 1/4 cup freshly grated Parmesan cheese
- salt and pepper to taste

That looks like the perfect bowl of heart-warming pasta. Great photo too!
That is one tasty looking pasta!
This recipe looks great! and the photos are fantastic. I plan to try it this weekend.
When do you add the garlic to this dish? also, what is the purpose of the jar with the word “Mozzetta” in front of it?
Hi Dandel, the garlic is roasted together with the onion and red peppers. The jar with the word “Mozzetta” is actually sun-dried tomatoes in oil. Minoo brought two different types of sun-dried tomatoes, one dried and another in oil just to show the members.
thanks so much for this recipe. I made it tonight and loved its heartiness on a cold night, and it is so great that it is all vegeterian.
