Red Rice Pilaf

Minoo also made a Red Rice Pilaf in the Gilmore Park Community Kitchen. This dish is made impromptu as Lorna gave a bag of red rice to Minoo that morning.

The Red Rice Pilaf was cooked to al-dente with a good bite to it. It’s almost like risotto to me.

Prep time: 10 minutes;  Cook time: 40 minutes;  Serve: 4 as a main dish or 6 as a side dish.

Ingredients

  • 2 cups red rice
  • 1 onion, chopped
  • 2 celery sticks, diced
  • 1/2 red pepper, diced
  • 6 button mushrooms, diced
  • water or chicken stock

Instructions

Red-Rice-Pilaf-5-300x200First, soak the red rice in water to soften it. The red rice is like wild rice and it takes a long time to cook. Cook the rice with water or chicken stock for better flavour. It takes much longer time to cook as we did not soak the rice enough.
Red-Rice-Pilaf-3-300x200When the rice is almost done, saute some onion and garlic in a pan with some olive oil. Add celery, peppers and mushroom when the onion is translucent. Saute until mushrooms are tender. Season with salt and pepper to taste.
Red-Rice-Pilaf-4-300x200Add the cooked vegetables to the rice and let steam for another 5 minutes. Lightly stir to combine. Serve as a side dish.
