Roasted Sweet Potatoes

For side dish, June and Helmut prepared some Roasted Sweet Potatoes at the South Arm Cooking Club for Seniors.


I simply love Roasted Sweet Potatoes. They are sweet and earthy. I like to make this healthier alternative to snack foods when hosting parties.


  • 2 pounds medium sweet potatoes
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon smoked paprika or cumin, optional

Prep time: 10 minutes;  Bake time: 45 minutes;  Serves 4

Combine seasonings in a small bowl.

Roasted-Sweet-Potatoes-2-300x200Peel sweet potatoes and cut into 1-inch chunks.
Roasted-Sweet-Potatoes-4-300x200Toss potatoes with oil and seasonings in a large mixing bowl until potatoes are evenly coated with seasonings.
Roasted-Sweet-Potatoes-5-300x200Spread potatoes in a single layer on a large baking sheet. Bake for 40 to 45 minutes in a 400F preheated oven. Turn the sweet potatoes over halfway through to promote even cooking and browning.When done, they should be tender with the edges just turning golden brown.
