Filipino Cuisine: Maja Blanca Con Mais

Marian made a Filipino dessert at the Caring Place Community Kitchen which is one of the many that we had at Goto King.

The dessert is called Maja Blanca Con Mais which is a corn custard topped with toasted shredded coconut.

Ingredients

  • 4 cups coconut milk (about 2 cans)
  • 1 to 1 1/2 cups cornstarch (depending on the brand used)
  • 1 can (300ml) condensed milk
  • 3/4 cup granulated sugar
  • 15 ounce whole sweet corn kernel
  • 5 tablespoons toasted shredded coconut
  • 3 1/4 cups milk

Instructions

IMG_0586Combine coconut milk, sugar, condensed milk and whole sweet corn kernel in a pot and bring to a boil in medium heat. Stir to evenly distribute ingredients. This takes about 8 minutes.
IMG_0587Combine milk and cornstarch in a large measuring cup or bowl. You may want to start with 1 cup of cornstarch first. Whisk to dissolve the cornstarch.Pour cornstarch mixture into the coconut milk mixture some at a time and continue to stir and watch for the mixture to thicken. If the mixture is not thickening as much, you may add more cornstarch to the milk mixture.
IMG_0596Eventually, the mixture should thicken until it resembles glue.

Grease two 8×8″ square pans with butter.

Pour the batter into the prepared pans, dividing equally. Smooth the top with a spatula. Let cool and refrigerate for one hour,

IMG_0610Meanwhile, toast some sweetened shredded coconut in a dry frying pan on medium heat until golden brown and fragrant.
IMG_0630Slice the chilled Maja Blanca Con Mais into 9 servings pieces per pan.

Garnish with toasted shredded coconut and served cold.
