Delicious Corn Bread

The Spiced Squash and Corn Chili goes well with Corn Bread. If you like other variation of corn bread there are a couple of corn bread recipes on Chowtimes:


The corn bread is great to be dunk into the chili to absorb the sauce (‘jhup’) of the chili.

Cornbread is a traditional staple of South and Southwestern of United States. It is a common bread served in restaurants which serve soul food.


  • 3/4 cup cornmeal
  • 1 1/4 cup milk
  • 1 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/4 cup vegetable oil

Serves 12


Delicious-Corn-Bread-2Preheat oven to 400F.

Grease an 8-inches square pan.

Mix cornmeal and milk and let it sit for 10 minutes.

Delicious-Corn-Bread-4Combine flour, baking powder, salt and sugar in a bowl.
Delicious-Corn-Bread-3Lightly eat the egg.

Stir the egg and oil into the dry ingredients.

Delicious-Corn-Bread-7Bake in a 400F preheated oven for 20 to 25 minutes or until a tooth pick inserted into the center comes out clean.

Serve hot or cold.

    To take this recipe to the new level I suggest to add 1/2 cup of fresh corn and 1 tsp of flax seed oil. The corn will add sweetness while the flax seed oil will add a nutritional benefit plus moisture!

    Yes to adding fresh corn. I recommend honey too like the Kenny Rogers corn muffins. KR’s corn muffins are SO, SO GOOD!

      Hi Lissa: Are you referring to the Kenny Rogers Roasters? It was popular in Malaysia but I don’t recall seeing anywhere in this part of the world. Ben
