- 3/4 cup cornmeal
- 1 1/4 cup milk
- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup granulated sugar
- 1 egg
- 1/4 cup vegetable oil

Instructions
To take this recipe to the new level I suggest to add 1/2 cup of fresh corn and 1 tsp of flax seed oil. The corn will add sweetness while the flax seed oil will add a nutritional benefit plus moisture!

Yes to adding fresh corn. I recommend honey too like the Kenny Rogers corn muffins. KR’s corn muffins are SO, SO GOOD!
