Minoo prepared a Roasted Asparagus with Orange Juice for the side dish to go with the Zucchini Meat Loaf. Aparagus is a spring vegetable.

1 pound fresh asparagus
3 tablespoons olive oil
1/3 cup orange juice
3 garlic cloves, minces
2 teaspoons poppy seeds
1/4 teaspoon salt

Yield: 4 servings.
Combine all ingredients except asparagus in a pot.
Bring the mixture to a boil in a small sauce pan until it’s syrupy and slightly thicken.
Trim the asparagus by gently bend near the end and let it break naturally. You may freeze the tougher end to make vegetables stocks later. Place the asparagus in an un-greased 15 x 10 x 1 inch baking pan; drizzle with the olive oil.
Pour the marinates over the asparagus; toss to coat well.
Bake in a preheated 400F oven for 18 to 22 minutes or until tender, stirring and basting with the sauce in the pan occasionally.
