Ingredients
- 2 tablespoons olive oil
- 1 cup chopped onion
- 4 cups chicken or vegetable broth or more
- 2 pounds russet potatoes, peeled and cut into 1/2 inch pieces
- 6 large garlic cloves, peeled
- 1 bay leaf
- 1/4 cup finely chopped chives for garnishing
- 2 teaspoons fresh thyme or 3/4 teaspoon dried
- salt and pepper to taste
