Polenta Fries

Stella sponsored a tube of prepared polenta to the South Arm Older Adults Cooking Club as she has no idea how to use it.  So, Michelle looked up for a simple Polenta Fries to be made in the kitchen.

The Polenta Fries is baked in a hot oven until golden brown and crispy on the outside. The Polenta Fries are served with a Simple Homemade Tomato Sauce.

Ingredients

  • 1 tube (18 ounces) plain prepared polenta
  • 1 1/2 tablespoons olive oil
  • Coarse salt and freshly ground pepper
  • 1/2 teaspoon dried Italian seasoning or dried oregano

Instructions

Polenta-Fries-05Preheat oven to 450 degrees.

Unwrap and cut the tube of polenta in half lengthwise. Then cut into half moon wedges.

Drizzle olive oil on a parchment lined rimmed baking sheet.

Place polenta wedges on the baking sheet. Turn the polenta gently to coat with oil. Arrange wedges in a single layer.

Season the polenta with salt and pepper.

Sprinkle with Italian seasoning or dried oregano.

Polenta-Fries-06Bake, turning once with a thin metal spatula, until golden and crisp, 45 to 50 minutes.

Drain on a paper towel lined plate.

Transfer to a shallow dish before serving.
