Lemon Loaf

We also made a Lemon Loaf in the South Arm Older Adults Cooking Club.

Due to time and oven constraints, the Lemon Loaf did not finish in time for lunch. Almost all the recipes for this kitchen require to use the oven, except for the salads. Michelle will freeze the loaf for enjoyment in the next kitchen.

Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup yogurt
  • 1 cup sugar
  • 3 eggs
  • zest of 2 lemons
  • 1/2 teaspoon vanilla
  • 1/2 cup vegetable oil
Syrup
  • 1/3 cup lemon juice
  • 1/3 cup sugar

Instructions

Lemon-Loaf-02Preheat oven to 350 degrees. Prepare loaf pan with butter and flour or line with parchment paper.

Whisk together flour, baking powder and salt in a large bowl.

In another bowl, combine yogurt, sugar, eggs, lemon zest, vanilla and vegetable oil.

Lemon-Loaf-03Add liquid ingredients to dry ingredients. Pour into loaf pan and bake for 50 to 60 minutes.
Lemon-Loaf-05While loaf is baking, heat lemon juice and sugar together. Stir until dissolved, remove from heat.When the loaf is ready, remove from oven, let stand for 5 minutes.

Remove from pan onto cooling rack.

Poke all over with skewer and pour or brush syrup over top of loaf.
