The South Arm Older Adults Cooking Club had a Christmas theme cooking session for the last meeting of 2013.
Michelle prepared some easy breakfast recipes and cookies recipes for the holiday season.
The first recipe is a Parfait with Dried Fruit Compote.
Ingredients
- 1 pound mixed dried fruit
- 1 cup fresh orange juice
- 1 cinnamon stick
- 6 cloves
- yogurt
- nuts or toasted oats or granola, optional
We used a mixture of dried apricot, prunes and cranberries. Chop larger pieces of dried fruit into smaller pieces.
Instruction
- Put all ingredients into a microwave-safe bowl and microwave for 4 to 5 minutes, stirring halfway through. Alternatively, you can simmer the ingredients in a saucepan on the stove until most of the liquid is absorb.
- Let cool, layered with yogurt and granola.
Tip: place cloves in a cheesecloth and tie it up for easy removal after simmering.
