I made this Lemon Dream Bars for a Christmas eve dinner with friends.

These Lemon Dream Bars have a rich coconut aroma. The tangy and sweet custard like filing makes it very appetizing.
Ingredients
- 3 cups graham cracker crumbs (I used Marie cookies)
- 3/4 cup coconut oil, melted
- 1 egg (slightly beaten)
- 3 egg yolks
- 1 can (14oz) sweetened condensed milk
- 1/2 cup lemon juice

Instructions
Preheat oven to 350F.
Crush cookies in a ziploc bag with a rolling pin into crumbs. |
In a large bowl, mix cookie crumbs with coconut milk and lightly beaten egg until combine. |
Reserve one cup mixture.
Press remaining mixture into the bottom of a 13×9″ baking pan. Bake 10 to 15 minutes or until lightly toasted. |
With a mixer or wire whisk, beat 3 egg yolks, condensed milk and lemon juice.

Spread mixture evenly over toasted crumb base. |
Top with reserved crumb mixture.
Bake 25 minutes or until set.
Refrigerate 2 hours. Cut into bars.
Store covered in refrigerator. |
i don’t have coconut oil. can you use coconut milk?
Hi ROSE, the original recipe calls for butter or margarine. I don’t think coconut milk is a good substitute.
