Lemon Garlic Sesame Salad

This Lemon Garlic Sesame Salad is simple to prepare and the dressing will be good in the refrigerator for a week.

Ingredients

  • 1 head leafy lettuce (we used Romaine)
  • 1 can mandarin sections
  • 1/4 cup slivered almonds

Dressing

  • 2 teaspoons toasted sesame seeds
  • 1/3 cup olive oil
  • 2 garlic cloves, minced
  • juice of one whole lemon
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt

Instructions

056Toast slivered almonds on a dry frying pan until light golden and fragrant. Like wise, if you use raw sesame seeds, toast them until lightly golden.

Let cool.

059In a jar, combine the dressing ingredients. Cover and shake to mix well.

Wash and spin dry (or pat dry) lettuce pieces. Break into bite size pieces.

Toss the lettuce with just enough dressing to coat.

073Top the salad with mandarin sections.

Sprinkle toasted almonds on top of salad.

Serve immediately.
