Strawberry Coffee Cake Muffins
With the local strawberries in season, Michelle shared a Strawberry Coffee Cake Muffins recipe in the South Arm Community Center’s Older Adults Community Kitchen.
These lightly sweet muffins with fresh strawberries and a delicious coffee cake crumble can be frozen for enjoyment later.
- 1/4 cup butter (softened)
- 3/4 cup granulated sugar
- 1 egg
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 cup milk
- 1 1/2 cup fresh strawberries (chopped)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup butter (cold)
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 granulated sugar
Yield: 18 muffins
|Preheat oven to 350F. Line muffin pan with paper liner.Cream butter and sugar in a mixing bowl.
|Beat in egg and vanilla.
|Combine flour, baking powder, and salt in a separate bowl.Slowly add milk and flour mix into the butter mix, alternating.Beat until completely combined.
|Add about 2 tablespoons of batter to each muffin liner.
|Top batter with strawberries.
|In a mixing bowl, beat crumble ingredients until it looks like crumble.
|Sprinkle crumble over the strawberries.Bake muffins in preheated oven for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.
