Strawberry Coffee Cake Muffins

With the local strawberries in season, Michelle shared a Strawberry Coffee Cake Muffins recipe in the South Arm Community Center’s Older Adults Community Kitchen.


These lightly sweet muffins with fresh strawberries and a delicious coffee cake crumble can be frozen for enjoyment later.


  • 1/4 cup butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1 1/2 cup fresh strawberries (chopped)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


  • 1/4 cup butter (cold)
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 granulated sugar


Yield: 18 muffins


IMG_4303Preheat oven to 350F. Line muffin pan with paper liner.Cream butter and sugar in a mixing bowl. 
IMG_4308Beat in egg and vanilla.
IMG_4312Combine flour, baking powder, and salt in a separate bowl.Slowly add milk and flour mix into the butter mix, alternating.Beat until completely combined.
IMG_4313Add about 2 tablespoons of batter to each muffin liner.
IMG_4315Top batter with strawberries.
IMG_4302In a mixing bowl, beat crumble ingredients until it looks like crumble.
IMG_4316Sprinkle crumble over the strawberries.Bake muffins in preheated oven for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.
