The arugula adds a peppery flavour to the salad.
- 1 pound fresh Spinach plus Arugula
- 1/3 cup sunflower seeds
- 1 can Mandarin oranges, drained
- 1/4 red onion, minced
- 1/4 cup cider vinegar
- 3 tablespoons olive oil
- 3 tablespoons water
- 1 tablespoon sugar
- 1/4 teaspoon Worcestershire sauce
- 1 garlic clove, minced

|Wash and dry the spinach and arugula. Tear into bite size pieces if not using baby spinach.
Place in a large bowl.
Add sun flower seeds and Mandarin orange segments.

|Pour dressing over salad and toss.
