The Richmond Chinese Free Evangelical Church Praise Dance group celebrated the end of the session with a potluck.
Here were the food from the potluck. Thank you everyone for sharing the yummy food.
Appetizers: Garlic Toast, Marinated Beef Shank.
Various salads.
Braised Beef with Daikon, Braised Pork Skin with Meatballs.
The Fried Yee Mee, Fried Rice and Fried Rice Noodle were sponsored by the church.
Dessert: Mango Pudding, Cheese Cake.
Steamed Red Bean Rice Cake (Poot Jei Gou), Jello.
I made Palm Sugar Jello (Agar-agar Gula Melaka). I actually planned to make Cassava Cake and bought the frozen grated cassava a week earlier. I brought the frozen grated cassava down to defrost in the fridge the day before. When I woke up in the middle of the night on the day of the potluck (wash room break), I went to check to see if the grated cassava has defrosted properly, otherwise I can let it sit on the counter to defrost thoroughly for the baking in the morning. I then realized that I bought the wrong ingredient. Instead of grated cassava, I got the grated coconut. They must have been placed in the same section in the groceries store.
I had to look in my pantry for ingredients for another dish. Luckily I found a packet of agar-agar and a packet of gula Melaka. I had to make it in the middle of the night because it needs time to set. Whew, I managed to get it done and cleaned up by 1AM.
I wish everyone a great summer. For those who wish to continue to exercise in the summer, there is a Praise Dance at the Hugh Boyd Park, starting from 8th July to 19th August, on Friday from 8:00am to 9:00am. Feel free to drop in. All are welcome.
