Swiss Chard Tzatziki (Yogurt Dip)

The South Arm Community Kitchen served the Zucchini Feta Fritters with Swiss Chard Tzatziki.

Ingredients

  • 1 cup finely chopped Swiss Chard leaves (ribs removed)
  • 2 garlic cloves, minced
  • 1/4 teaspoons salt
  • 1 cup plain yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • a dash of cayenne and cumin

Instructions

IMG_9051Sauteed the Swiss Chard with a little oil for 5 minutes until wilted. Let cool.

For a healthy version, you can cook the Swiss Chard in boiling water for 5 minutes, remove and dump in a bowl of ice water to stop cooking and strain.

IMG_9053In a medium-sized bowl, combine yogurt, garlic, cayenne, cumin and lemon juice.
IMG_9054Add olive oil.
IMG_9063Add Swiss Chard.
IMG_9064Use a hand blender to blend everything together.

Refrigerate until serve.
