The South Arm Community Kitchen served the Zucchini Feta Fritters with Swiss Chard Tzatziki.
- 1 cup finely chopped Swiss Chard leaves (ribs removed)
- 2 garlic cloves, minced
- 1/4 teaspoons salt
- 1 cup plain yogurt
- 1 tablespoon extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- a dash of cayenne and cumin

|Sauteed the Swiss Chard with a little oil for 5 minutes until wilted. Let cool.
For a healthy version, you can cook the Swiss Chard in boiling water for 5 minutes, remove and dump in a bowl of ice water to stop cooking and strain.
|In a medium-sized bowl, combine yogurt, garlic, cayenne, cumin and lemon juice.|
|Add olive oil.|
|Add Swiss Chard.|
|Use a hand blender to blend everything together.
Refrigerate until serve.
