Split Pea Soup

The second recipe we made in the South Arm Community Kitchen is a healthy Split Pea Soup.

The soup is refreshing with lemon juice, fresh mint and parsley.
Ingredients

  • 1 onion, chopped
  • 5 cloves garlic, finely minced
  • salt and pepper to taste
  • 8 to 10 cups chicken or vegetable broth
  • 2 cups green split peas
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup fresh parsley leaves, chopped
  • 1 lemon, juiced
  • 1 teaspoons cumin or paprika

Instructions

Saute onion and garlic. Season with salt and pepper and cook until tender, 8 to 10 minutes.
Add split peas.
Add stock and bring to a boil, then reduce heat to a simmer cook until just tender, about 20 minutes.
Add mint and parsley and lemon juice.
 Puree until smooth in a food processor or with a hand blender.
Taste and adjust with salt and pepper.
Served with toasted pita.
