Tuna Loaf with Potatoes

The South Arm Community Kitchen met again for another cooking adventure.

For this kitchen, we made a Tuna Loaf with Potatoes.

Ingredients

  • 2 cups mash potatoes
  • a teaspoon Paprika
  • 2 teaspoons Dijon mustard
  • salt and pepper to taste
  • 1 egg
  • 1/3 cup Parmesan
  • 1/2 cup drained tuna
  • a small bunch of Parsley, chopped
  • a handful of sliced black olives
  • breadcrumbs for coating

Instructions

Boil and mash potatoes.
Grate lemon zest to drained tuna.
Combine tuna, Parmesan, parsley and olives in a bowl.
Add tuna mixture and egg to mash potatoes.
Add Dijon mustard.
Add paprika, salt and pepper to taste.
On the counter, spread the bread crumbs.

Form the tuna potato mixture into the shape of a loaf and place onto the breadcrumbs. Top all sides of the loaf with breadcrumbs.

Place loaf onto a parchment paper.

Drizzle with olive oil.

Wrap the loaf with the parchment paper like a candy.

Bake in a preheated 350F oven for 30 minutes.

 

Let cool before slicing it.

You may serve the Tuna Loaf with a dollop of mayonnaise.
