Oatmeal Cranberry Cookies

These healthy Oatmeal Cranberry Cookies are great for snack. You can pack them in your kid’s lunch bag or enjoy them with coffee or tea.
- 1 1/2 cup large flake oats
- 3/4 cup whole wheat flour
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup salted butter, softened
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup dried cranberries, roughly chopped if they are big pieces
- 1/4 cup white chocolate chips

Minoo also shared some tips on packing healthy school lunches at the kitchen.
|Preheat oven to 350F.
In a medium bowl, combine oats, flour, coconut, baking soda, baking powder, cinnamon and salt.
Mix with a fork.
|In a large bowl, combine softened butter with brown sugar. Using a whisk, beat until creamy.
Add egg and beat for another 30 seconds.
|Add vanilla and stir to combine.
|Using a wooden spoon or rubber spatula, slowly add the dry ingredients to the wet ingredients. Mix to combined.
|Roll 1 tablespoon of dough into a ball and place onto a baking sheet lined with parchment paper.
Use a fork to lightly flatten the dough.
Continue with the remaining dough, spacing cookies 1 to 2 inches apart.
|Bake for 12 minutes until the edges are golden.
|Let the cookies rest for a few minutes before moving them to a cooling rack.
|The white chocolate goes well with the cranberries.
