Old Fashioned Coffee Cake

The South Arm Community Kitchen made an Old Fashioned Coffee Cake for dessert for the last kitchen of 2017.

This is a basic coffee cake where the sweetness comes from maple syrup.

Ingredients

  • 3 cups flour (unbleached white or you can use 1/2 whole wheat pastry flour)
  • 1/2 pound butter
  • 1 cup maple syrup
  • 2 eggs
  • 3 teaspoons baking powder
  • 1 cup sour cream
  • 1 teaspoon vanilla

Topping

  • 1 cup chopped walnuts
  • 1 teaspoon cinnamon
  • 1/4 maple syrup

Instructions

Preheat oven to 350F.

Butter and flour a tube pan or a flat pan.

In a bowl combine butter, eggs, maple syrup and vanilla.

In another bowl, mix flour and baking powder.
Cream the egg and butter mixture until fluffy.
Add 1/3 of flour mixture gradually to the creamed egg mixture.
Add 1/3 of the sour cream and continue to whisk.

Alternating mixing in the flour and sour cream and beat well.

Spoon half of the batter into the prepared pan and spread evenly.
Combine the topping ingredients in a bowl and mix well.
Spoon 1/2 of the topping onto the batter in the pan and spread evenly.
Add the remaining batter onto the pan and spread evenly.
Spread the remaining toppings onto the batter.

Bake at 350F for 1 hour or until a cake tester inserted into the middle of the cake cokes out clean.

Let rest before slicing.
