Caramel Chocolate Crackers
A new participant of the South Arm Community Kitchen said she must have something sweet after a meal. There is nothing wrong to treat ourselves with a dessert, just watch the portion size.
We made some Caramel Chocolate Crackers for our sweet treat.
- 40 salted soda crackers
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1/2 teaspoon pure vanilla extract
- 1 1/2 to 2 cups semi sweet chocolate chips or chunks
- 1 cup sliced almonds, preferably toasted

Yield: 40 pieces
|Preheat oven to 350 degrees Celsius.
Lined a baking sheet with foil, lightly grease.
|In a heavy, medium sized pot, melt the butter and brown sugar over medium heat. Stir until mixture boils, continue stirring and boiling for 3 minutes.
|Quickly pour the caramel over the crackers and spread it out immediately.
Bake for 15 minutes, watching carefully for burning.
Reduce heat to 325 degrees if necessary.
|Meanwhile, melt chocolate chips or chunks in a bowl over a pot of hot water.
|Quickly pour the melted chocolate over the crackers and spread out evenly over the caramel coated crackers.
|Sprinkle with the almonds. Let cool.
|Break into pieces. Store in an airtight container.
