Caramel Chocolate Crackers

A new participant of the South Arm Community Kitchen said she must have something sweet after a meal. There is nothing wrong to treat ourselves with a dessert, just watch the portion size.

We made some Caramel Chocolate Crackers for our sweet treat.
Ingredients

  • 40 salted soda crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 to 2 cups semi sweet chocolate chips or chunks
  • 1 cup sliced almonds, preferably toasted

Yield: 40 pieces

Instructions

Preheat oven to 350 degrees Celsius.
Lined a baking sheet with foil, lightly grease.
 
In a heavy, medium sized pot, melt the butter and brown sugar over medium heat. Stir until mixture boils, continue stirring and boiling for 3 minutes.
Add vanilla.
Quickly pour the caramel over the crackers and spread it out immediately.
Bake for 15 minutes, watching carefully for burning.
Reduce heat to 325 degrees if necessary.
Meanwhile, melt chocolate chips or chunks in a bowl over a pot of hot water.
Quickly pour the melted chocolate over the crackers and spread out evenly over the caramel coated crackers.
Sprinkle with the almonds. Let cool.
Break into pieces. Store in an airtight container.
