Potato Leek Soup

Minoo made a staple soup which is Potato Leek Soup. Soup is always great for the cold winter days and what better than a hearty soup with some crusty bread. It is also a great recipe to use up the potatoes which we often buy in bulk in those 10lbs bag.

The leek gave this soup a very refreshing oniony flavour. Make a big batch of the soup and you can freeze your leftover in single portion size in ziplock bags or freezer safe containers and you can have soup any time. Just reheat the soup on the stove on medium heat until it comes back to a simmer. Do not add any cream if you intend to freeze the soup. Add the cream just before serving.

Ingredients

  • 7 large potaotoes (leave peels on)
  • 3 to 4 leeks
  • 3 stalks celery
  • 1 large onion
  • 4 cloves of garlic
  • a little fresh basil (or dried ones)
  • 2 tablespoons corn oil
  • 1 or 2 bay leaf
  • a few sprigs fresh parsley, chopped or 1 teaspoon dried ones
  • light cream (optional)
  • 6 to 8 cups of water
  • salt and pepper to taste

Danish Sugar-browned Potatoes (Brunede Kartofler)

Minoo made this Danish Sugar-browned Potatoes specially for Paul. Paul described this potato dish to Minoo and Minoo was able to get the recipe from a Danish in a grocery store she visited. When Minoo tried the recipe at home, she ate all the potatoes by herself because they are that good.

The Danish Sugar-browned Potatoes are tender and sweet. They pair well with roast beef, chicken, pork or lamb.

Ingredients

  • 12 – 15 Parisian potatoes
  • 1/2 cup sugar
  • 1/2 cup butter

Kidney Bean Casserole

Andrea made two German dishes in the South Arm Community Kitchen. It’s been a while since Andrea demonstrated after she gave birth to a beautiful girl. It is so amazing that we watched Andrea’s tummy grew and now watching her little girl grows. One good thing about the South Arm Community Kitchen is that it provides baby sitting facility. Mums with young toddlers can still participate in this kitchen.

Andrea first dish is called Kidney Bean Casserole. This casserole is great for potluck. You may serve this casserole with a salad and you’ve got a complete meal.

The top layer of potatoes has a glutinous texture. The Kidney Bean Casserole is very filing.

Ingredients

  • 500g potatoes, peeled (or thoroughly scrubbed), grated
  • 400g kidney bean in cans
  • 500g onions, sliced
  • 100g bacon, cubed
  • 300g ground beef or pork
  • 1 clove garlic, minced
  • 1 tablespoon oil
  • 1 egg
  • bunch of parsley
  • salt and pepper to taste
  • fresh or dried rosemary, finely chopped
  • butter to grease baking dish

Cream of Broccoli Soup

Minoo and Tanni teamed up to demonstrate in the Gilmore Park Church community kitchen. Two person demo makes the job lighter and less stressful. This is a good way to encourage participation.

Minoo made a Cream of Brocolli Soup. The recipe calls for evaporated skim milk which makes this creamy soup low fat. However, Minoo did not have evaporated milk on hand and she replaced it with half and half.

Here are some nutritional facts of broccoli:

  • high in Vitamin C
  • rich in soluble fiber
  • contains multiple nutrients with potent anti-cancer, anti-viral and anti-bacterial properties
  • high in Vitamin K

Broccoli can be eaten raw in salad or hor-d’oeuvre. It can be boiled or steamed but boiling reduces the levels of anticancer compounds. Preferred preparation methods which will not reduce the presence of anticancer compounds are steaming, microwaving and stir-frying.

Ingredients

  • 2 tablespoons olive oil
  • 4 large cloves garlic, pressed
  • 1 large onion, chopped
  • 1 head broccoli, broken into florets
  • 1 celery rib, coarsely chopped
  • 2 carrots, coarsely chopped
  • 2 medium all purpose potatoes, peeled and chopped
  • 1/4 cup flour
  • 4 cups chicken broth
  • 4 cups water
  • 1 teaspoon dried parsley
  • 1 12oz can evaporated milk
  • a teaspoon ground cumin (optional)
  • salt and pepper to taste

Pumpkin and Potato Stew

I usually park at the Minoru Park parking lot when I go to the Caring Place Community Kitchen. It’s just a short walk away. Today, I was greeted by some awesome full bloom cherry blossoms in Minoru Park. It was a breath-taking sight. The cherry blossoms never fail to marvel me.

Back to the Community Kitchen, Minoo shared a Pumpkin and Potato Stew along with the Broccoli Salad I blogged earlier. This is such a simple recipe that Zoe helped Minoo to prepare the dish while Minoo ran to the store to get the beans which she missed out in her grocery shopping.

The Pumpkin and Potato Stew is a one pot meal which is complete with protein, carbohydrate, vitamins and fiber. A good recipe for a lazy day.

Ingredients

  • 1 onion, chopped
  • 2 tablespoons oil
  • 3 cloves garlic, chopped
  • 3 to 4 potatoes, peeled and cubed
  • 1/2 teaspoon oregano
  • 1/2 can chopped tomatoes or tomato sauce
  • 1 tomato, chopped (optional if using tomato sauce)
  • 1 can pumpkin puree
  • 1 can of beans (butter beans or Lima beans), rinsed and drained
  • salt, sugar and pepper to taste
  • chili and paprika to taste (optional)

Baked French Potato Wedges

Jean made two dishes in the Gilmore Park Church community kitchen. Jean told us that we will be the guinea pigs to test the recipes as this is the first time she’s making them.

The first dish is the Baked French Potato Wedges. These potato wedges are crispy, flavourful and cheesy. I’m sure kids will love this, especially mine.

Ingredients

  • 4 medium russet potatoes, scrubbed and cut into 8 wedges each
  • 2 tablespoons margarine or butter, melted
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried basil
  • 1 teaspoon chopped garlic
  • 1 1/2 teaspoons chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese
  • 1/2 cup shredded Parmesan cheese

Indian Fries (Chana Na Bhajia)

Zee made her sons some Indian Fries called Chana Na Bhajia. Chana is a kind of lentils flour. Na Bhajia means the shape of the food which is kind of oval or in a blob.

  • 4 medium potatoes
  • 4 tablespoons chana flour
  • salt and chilli pepper to taste
  • about 1 cup of cold water

Potato Puffs

Zee came to my kitchen to show me how to make a simplified version of samosas. I am going to call it Potato Puffs. We only use potatoes as filings but you can make it with other filings like chicken, beef, fish, etc.

The Potato Puffs is crispy on the outside and the potato filing is soft and of the right spiciness. My family loves it, especially Arkensen. He ate the most of it.

It’s kind of like the curry puffs we find in Malaysia. The difference is that the curry puff in Malaysia is deep fried while the Potato Puffs is oven baked which is more healthy.

Ingredients

  • 1 box of puff pastry from the frozen section of the groceries stores where you find pie crust, etc
  • 3 medium potatoes
  • 1 teaspoon cumin seeds
  • 1/2 piece cinnamon stick
  • 3 black cloves
  • 6 whole peppers
  • 2 white cardamon
  • 2 bay leaves
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon parsley and green chilie paste
  • 1/4 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • salt to taste
  • chilie powder to taste
  • 1/2 teaspoon crush tomatoes
  • 1/2 teaspoon tomato paste
  • 1 egg
