Yangchow Fried Rice

Fanny, Alice and Garrie contributed to this famous Yangchow Fried Rice in the South Arm Community Kitchen.  Do you know that Yangchow Fried Rice did not originate from Yangchow, China?

The characteristic of Yangchow Fried Rice is that it has shrimp and BBQ Pork.

Ingredients

  • 2 oz peeled shrimp
  • 2 oz BBQ pork or cooked ham
  • 4 oz grren peas or corn
  • 3 eggs
  • 1 teaspoon salt
  • 2 scallions, finely chopped
  • 4 tablespoons vegetable oil
  • 1 tablespoon light soy sauce
  • 1 tablespoon Chinese rice wine or dry sherry
  • 1 lb cooked rice (preferably overnight)
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 1 inch ginger, minced

Pat dry the shrimp with paper towels.  Cut the BBQ pork into small dice about the same size as the peas or corn.   Please ignore the bok choy as it’s for the another stir fry dish.

Instructions

Yangchow-Fried-Rice-2-300x200In a bowl, lightly beat the eggs with a pinch of salt and a few pieces of the scallions (if preferred).  Cook the eggs in a frying pan and remove, slice into small pieces and set aside.  Do not overcook the eggs to prevent it from getting too tough (or old as the Chinese express it).
Yangchow-Fried-Rice-3-300x200Heat 2 tablespoons of oil in a preheated wok, stir-fry the shallots, ginger and garlic until fragrant.

Yangchow-Fried-Rice-5-300x200Add the corn or peas and the BBQ pork or ham and for until they are heated through.  Season with soy sauce and wine or sherry.  Remove and keep warm.
Yangchow-Fried-Rice-9-300x200Heat the remaining oil in the wok and re-heat the cooked rice.  Stir to  make sure that each grain of rice is separated.
Yangchow-Fried-Rice-6-300x200Add the shrimp, corn and BBQ pork mixture.  Alice reserves some for the stir fry bok choy.  Stir fry to mix well.
Yangchow-Fried-Rice-7-300x200Add the scallions towards the end.  Season with salt and soy sauce.  Blend well.  Serve warm.

    I’ve been a silent reader for a very long time! Yangchow Fried rice, always wanted to learn how to make it right!! I just had to comment lol. By the way, do you know any late night restaurants that open really late? 2-3AM? Hope you’re having fun on your vacation!

      Hi Deelicious: The only restaurant that I know of that opens 24hrs is the #9 Restaurant in Richmond. I am sure that there are others. We are having a great time in Barcelona. Lots of eating (some awesome, some terrible!) and sightseeing. Ben

    Congee Noodle House on Broadway is open til 3AM. Yangchow fried rice can be a hit or miss at restaurants.

    Yangchow fried rice is one of my favorite fried rice dishes other than the dried scallop and egg white fried rice which is my personal favorite. The addition of wine/sherry is something new to me for fried rice. I have never thought about adding it in but it sounds good!
