If separation is required, simply catch the yolk in one half of the eggshell, rock it back and forth into the other half until all the white has dripped into the bowl, then transfer to yolk to its own vessel for further use.
The little bouncy yolk is kind of cute. Better use nice fresh eggs or the yolk could pop – which would be a disaster if whipping the egg whites.
