Oatmeal Blueberry Muffin

Mary requested for a recipe of blueberry muffin. Minoo has many blueberry muffin recipes but this recipe that Minoo shared is one she has never try before. She likes that there is oatmeal in this recipe.

This Oatmeal Blueberry Muffin has a very moist batter. Minoo added some freshly ground flax seeds for additional nutrition. Flax seeds are high in Omega-3 essential fatty  acid and high in fiber and lignans. Some of health benefits of flax seeds are:

  • lower cholesterol
  • fight diabetes
  • fight constipation
  • fight cancer
  • fight inflammation
  • fight menopausal systoms
  • fight heart disease

Ingredients

  • 1 1/4 cups quick cooking oats
  • 1 cup all-purpose flour
  • 1/3 cup white sugar
  • 1 tablespoon baking powder
  • 1/3 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 cup bluberries
  • 1 teaspoon freshly ground flax seeds

You can use fresh or frozen blueberries for this recipe.

Oatmeal Zucchini Loaf

In the South Arm Cooking Club for Seniors, we sometimes made extra food for the seniors to take home. This is a hearty and healthful bread for breakfast. It is dense and solid.

This recipe is a great recipe to use up the zucchini from the garden. It is a good way to sneak in some vegetables for family with kids who claim that they are allergic to vegetables.

This is a very hearty bread full of goodness from the roll oats, nuts, zucchini and cranberries.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup quick rolled oats
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1 1/2 cups brown sugar
  • 1 cup unsweetened applesauce
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups shredded, unpeeled zucchini
  • 1 cup chopped walnuts
  • 3/4 cup sweetened dried cranberries
  • turbinado sugar for sprinkling (optional)

Oatmeal Currants Cookies

For dessert, Minoo made an Oatmeal Currants Cookies. This recipe is specifically for a gentleman participant in the Gilmore Park Church Community Kitchen who would love to learn to bake some simple cookies or muffins.

These Oatmeal Currants Cookies make a healthy treat for kids lunch boxes.

Ingredients

  • 3/4 cup old-fashioned rolled oats or quick cooking oats
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup unsalted butter, softened (1/2 stick)
  • 1/2 cup packed light brown sugar
  • 1 large egg white
  • 1/4 teaspoon vanilla extract
  • 1/4 cup currants

Easy Granola Bars

This Easy Granola Bars are fantastic and have a lot of flexibility. You can adapt the recipe to your liking. They are great for hikes, long road trips and camping as they store well and keep for fairly long time. You may adapt any combination of chocolate chips, dried fruit, coconut, pecans, almond slices, or any other tidbits you like in this granola bar.

Minoo made a Oatmeal Scone in the Caring Place Community Kitchen to go with Manijeh’s Pilaf.  Minoo always shares healthy recipe in the community kitchen to promote healthy eating lifestyle.

This recipe is adapted from Eat Well.  This Oatmeal Scone is great for breakfast.  It has a hint of cinnamon and filled the goodness of oatmeal and flax seed.  You can add raisins or dried cranberries to this recipe for added sweetness.

Ingredients

  • 1 3/4 (425ml) cups all-purpose flour
  • 1 cup (250ml) quick cooking (not instant) rolled oats
  • 2 tablespoons (25ml) granulated sugar
  • 2 1/2 teaspoons (12ml) baking powder
  • 1/2 teaspoon (2ml) baking soda
  • 1/2 teaspoon (2ml) cinnamon powder
  • 1/4 teaspoon (1ml) salt
  • 1/2 cup (125ml) cold butter, cubed
  • 1 cup (250ml) buttermilk
  • 1 to 2 tablespoons ground flaxseed (optional)
  • 1 egg

Topping:

  • 1 tablespoon (15ml) buttermilk
  • 1 tablespoon (15ml) coarse sugar

Crispy Oatmeal Bars

Jenny commented on my previous blog asking what I made for the Potluck. Well, here it is.

I made some Crispy Oatmeal Bars for the Caring Place Community Kitchen potluck. We’ve got very short notice on the potluck, just the day before the potluck. I had to look for a recipe which I can make without going out for last minute shopping and I found this Crispy Oatmeal Bars where I had all the ingredients on hand.

Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup shortening (or margarine or butter)
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oatmeal (not instant)
  • 1/2 cup chopped nuts or raisins or other dried fruit or chocolate chips
