Mixed Greens with Orange Chive Dressing

This Mixed Greens with Orange Chive Dressing has a refreshing summer feel.

Ingredients

  • 3 oranges
  • 3 tablespoons olive oil
  • 1 tablespoon chopped chives
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon each salt and ground black pepper
  • half bulb fennel, cored
  • 5 cups mixed salad greens, washed and dried

Fennel bulb is actually called “Florence Fennel” and is a crisp vegetable that can be sauteed, stewed, braised, grilled or eaten raw. They are used for garnishes or can add flavour to salads. It is high in Vitamin C, fiber and potassium.

Instructions

009Working over a bowl, cut rind and outer membrane off oranges, cut between membranes and release fruit into the bowl.Reserve 2 tablespoons juice in a separate bowl.
017Whisk oil, orange juice, chives, mustard, salt and pepper and set aside.
007With a knife, grater or mandolin, thinly slice fennel.
018Place salad greens, orange segments and fennel in a large bowl.
037Toss salad with 2 tablespoons of the dressing.
