The last item we made in the South Arm Women Community Kitchen is a cookie bar.
These Oatmeal Chocolate Chip Cookie Bars are good for breakfast or snack on the go.
Ingredients
- 1 cup unsalted butter at room temperature
- 1 1/2 cups all-purpose flour
- 1 1/2 cups brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups quick oats or rolled oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 to 1 1/2 cups chocolate chips

Instructions
Preheat oven to 350 degrees F.Butter and flour a 9×13″ pan (or line with parchment paper).
Beat butter and sugar with electric mixer until light and fluffy, 2 to 3 minutes. |
Add eggs and vanilla, mix until combined. |
Combine flour, oats, salt and soda in a bowl and blend well. |
Add flour mixture into butter mixture and mix until combined. |
Stir in chocolate chips. |
Spread dough in prepared pan, smoothing and pressing into edges with rubber spatula. Alternatively, you can cover the dough with another parchment paper to ease the smoothing out of the dough. |
Bake until golden brown and set in center, about 30 to 35 minutes, rotating pan halfway through.Transfer to wire rack to cool completely.
Cut into squares. |
