Greek Yogurt Cake


The South Arm Multicultural Community Kitchen ended the Greek theme meal with a Greek Yogurt Cake.

The Greek Yogurt Cake is moist and a great dessert to end a meal.

Ingredients

  • 1 cup any flavour yogurt
  • 3 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • powdered sugar for dusting

Instructions

IMG_7876Heat oven to 350F.

Grease and dusk with flour an 8-inch cake pan.

IMG_7878Combine flour and baking powder in a medium bowl and set aside.
IMG_7871In another medium bowl, using a hand mixer on medium speed, lightly beat eggs (approximately 30 seconds).
IMG_7872Add sugar.
IMG_7873Add oil.
IMG_7875Add yogurt and beat for 1 minute until smooth.
IMG_7880Add flour mixture and beat until well combined, approximately another minute.
IMG_7884Pour into the prepared cake pan and bake 35 to 40 minutes or until a toothpick or knife inserted in the center of the cake comes out clean.
IMG_7920Let cake cool on wire rack.

When cool, sprinkle with powdered sugar if desired.
