Mandarin Loaf Cake

The South Arm Multicultural Community Kitchen made a Mandarin Loaf Cake for dessert to end our meal.

Ingredients

  • 3 Mandarins
  • 3 eggs
  • 1/3 cup oil or melted butter
  • 1 cup sugar
  • 1 1/4 cup to 1 1/2 cup flour (depending on how juicy is the Mandarins)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • zest of 1 Mandarin

Instructions

img_9821Zest 1 Mandarin.
img_9820Blend 3 Mandarins with a hand blender. Ensure seeds are removed if there is.
img_9824Add the eggs to the blended Mandarin and blend to combine.
img_9826Add the oil and beat some more.
img_9829Add the sugar and continue beating to incorporate.
img_9834Mix flour, baking soda, salt and zest in a mixing bowl.
img_9839Add dry ingredients to the wet ones and fold with a plastic spatula.
img_9846Line a loaf pan with parchment paper.

Pour the mixture into the loaf pan.

img_9874Bake in a preheated 350F oven for 35 to 55 minutes or until a tooth pick inserted into the center of the loaf comes out clean.
