Mexican theme: Chicken Quesadilla

The main dish for the Mexican theme menu shared in the South Arm Community Kitchen is Chicken Quesadilla.

We served the Chicken Quesadilla with Guacamole and Salsa.

Ingredients

  • 1 pound skinless, boneless chicken breast, cut into bite size
  • 2 tablespoons taco seasoning (recipe below)
  • 2 green peppers, cut into strips
  • 2 red peppers, cut into strips
  • 1 onion, sliced
  • 10 x 10-inch flour tortillas
  • 1 package Cheddar Cheese, grated

Taco Seasoning:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon Oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Pork Lettuce Wrap

For the main dish, Michelle prepared a Pork Lettuce Wrap for the Chinese New Year celebration at the South Arm Cooking Club for Seniors.

You can use ground turkey or chicken for this recipe.

Michelle served the meat mixture, lettuce cups, cashew and cilantro separately.  The diners will help themselves with the assembly of the lettuce wrap by spooning the meat and vegetable mixture into the lettuce cup and garnish with cilantro and chopped cashews if desired.

Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 1/3 cup finely chopped red onion
  • 1 cup finely chopped button mushrooms
  • 1/2 cup water chestnuts, finely chopped
  •  1 lb ground pork or chicken or turkey
  • 8 to 10 iceberg lettuce leaves, washed and edges trimmed
  • handful of cilantro, chopped
  • 1/4 cup chopped cashews

Chicken Wrap

For the main course, Marian prepared a simple Chicken Wrap for the South Arm Cooking Club for Seniors. The Chicken Wrap is a nice change from the regular pasta or grain dish.

The Chicken Wrap is colorful as it has various color vegetables like green snow peas, yellow and red bell peppers.

To make it a tad more healthy, we used whole wheat tortillas instead of white ones.

Ingredients

  • 4 to 5 pieces of skinless chicken breasts, cut into strips
  • 1 red and yellow bell pepper each, de-seeded and sliced
  • 1 cup snow pea, trim ends
  • 8 pieces of whole wheat tortillas
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • hot sauce (optional)
  • salt and pepper to taste

Roast Pork Rice Paper Roll

Vanessa also made some Roast Pork Rice Paper Rolls to serve with the Pineapple Fried Rice. The roast pork is bought from the best roast pork stall at Parker Place in Richmond.

The Roast Pork Rice Paper Roll is best served warm, unlike the Vietnamese Shrimp Rice Roll which is served cold.

Ingredients

  • 1 lb roast pork, cubed
  • 1 package of rice paper
  • 3 carrots, peel and cut into match sticks
  • 1 large red onion, thinly sliced
  • 1 bag of bean sprouts
  • Hoisin Sauce to taste
