Charlene prepared another sumptuous meal for the South Arm Cooking Club for Seniors again. This time, there are 5 simple and healthy recipes.

The first recipe is called Fish en Papillote which is a fancy term for fish wrapped in paper. In this recipe, the fish steams in its own package. It’s a wonderful meal for one.
Ingredients
- 1 tablespoon chopped red onion
- 10 thin slices of zucchini
- 1 x 4 ounce white fish filet, such as sole or flounder
- 2 thin slices of lemon
- 1 teaspoon olive oil
- salt and pepper to taste
- garlic powder to taste
- thyme or any herbs of your preference to taste

Prep time: 10 minutes; Bake time: 15 minutes; Serves 1
Instructions
Preheat oven to 425F.
Prepare garlic powder and herbs of your preference. |
Chop and slice onion, zucchini and lemon. |
On the bottom half of a piece of parchment paper of aluminium foil, arrange zucchini , forming a small bed of vegetables. |
Top with onions and sprinkle lightly with salt, pepper, garlic powder, and thymes. |
Drizzle with 1/2 teaspoon of olive oil. |
Place fish filet on top. Once again, season with salt, pepper, garlic powder, and thyme. Drizzle with remainder 1/2 teaspoon of olive oil. Top with lemon slices. |
Fold the paper over the fish. |
Pressing down the folded end to make a crease. |
Starting from the right end of the open edges, make a triangle fold. |
Continue to pinch edges into small, 1/2-inch folds all the way around … |
… until the fish is completely sealed inside the package. Make sure there are no holes for the steam to escape.Place fish package on a baking sheet and bake in a 425F preheated oven for 12 to 15 minutes, or until the fish is cooked through depending on the thickness of the fish.
To serve, place package on individual plate. Or, cut open one side of the package and use a spatula to slide the fish, vegetables and juices onto the plate. |
This is a very healthy dish. Hardly any oil in it. A good way to detoxify the body after eating lots of pork bellies. Thanks for posting.
