The South Arm Multicultural Community Kitchen made a Greek theme meal.

The first recipe is Moussaka.

We served the moussaka with a yogurt dip.
Ingredients
- 4 Asian eggplants
- 2 carrots diced
- 3/4 pound ground beef
- 1 egg
- 1/2 cup Panko bread crumbs or oats
- 1 teaspoon ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon ground nutmeg
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- ground pepper to taste

Instructions
Make 4 to 6 vertical slits onto the surface of the eggplants. |
Wrap in plastic wrap and microwave for 3 to 5 minutes or until the eggplants softened. |
Grease the loaf pan on all sides. |
After the eggplants have cooled down, carefully peel the skin off. |
Arrange the eggplant skins onto the loaf pan. |
Chop the flesh of the eggplants, onions and carrots.
Combine ground beef, eggplants, onions, garlic, carrots, eggs and oats in a large bowl. Add nutmeg. |
Add Worcestershire sauce. If you do not have Worcestershire sauce, you may substitute with soy sauce. |
Add thyme and ketchup. Season with salt and pepper.
Mix the ingredients well. |
Pour mixture into the eggplant lined pan. Gently pat down. |
Cover the meatloaf with the overhang eggplant skin. |
Bake in a 400F preheated oven for 25 minutes.
Allow to cool in pan before removing to slice. |
