Berry Bread

Today, Tammi showed us (the Richmond Community Kitchen Cooking Club) how to make Berry Bread. She made 2 types of Berry Bread, mixed berry (frozen) and strawberry (fresh). She used the same batter recipe for both the bread.

Here is the fresh strawberries bread.

Ingredients

  • 1 cup of fresh or frozen berries, chopped
  • 2 cups sifted all-purpose flour
  • 3/4 cup granulated sugar
  • 3 teaspoons of baking powder
  • 1/2 cup walnuts, chopped
  • 2 eggs
  • 1/4 cup butter, melted
  • 1 tsp vanilla
  • 1 cup milk

Instructions

IMG_4088_edited-1First, Tammi combined the dry ingredients i.e. the flour, sugar, baking powder and walnuts in a large bowl.
IMG_4089_edited-1In another bowl, she slightly beat the egg and added the rest of the wet ingredients, i.e. melted butter, vanilla and milk.
IMG_4093_edited-1Next, she combined the wet ingredients into the dry ingredients and stirred until mixed.
IMG_4096_edited-1For the strawberry bread, a cup of chopped strawberries is added to the batter.
IMG_4094_edited-1As for the mixed berries bread, she added a cup of the chopped frozen mixed berries. The batter is stirred until combined. The bread is baked in a loaf pan in a preheated 350F oven for 55-60 minutes. You may test the doneness with a toothpick. It may require longer baking time if the berries are very moist.

The Berry Bread turned out to be very moist and not too sweet. This is a very simple recipe and just in time for the berry season in the summer.

    I just tried your recipe! My berry loaf came out good, except the berries were very moist and the crust would have burned if I’d baked anymore, and the addition of a tiny bit of wholemeal flour could have contributed to inadequate rising. But it was delicious and I am very satisfied.
